The name of the Black C wine is a clever play on words, with "C" representing Cabernet Sauvignon, the grape variety from which the first Black C wine is made. Тhe Santa Sarah team's search for a suitable location eventually led them to the Black Sea coast, where they set up their workshop. Subconsciously, from the very beginning, creating the Black C wine, Santa Sarah Wine Estate knew that it would drop anchor on the Black Sea and set foot on solid ground from which it would create wines with a distinct identity. Black C Rose 2022 is a blend of Grenache and Pinot Noir varieties, carefully selected from the estate's own vineyards in the Goritza area. The estate's commitment to quality and consistency is reflected in the vineyards, which are tended to by a team of dedicated enthusiasts.

Vinification

80% of the grapes are pressed directly, meaning they are crushed and the juice is extracted without any extended skin contact. The goal here is to minimize the extraction of color and crude phenols, which can give the wine a bitter or astringent taste, and instead preserve the fresh and aromatic characteristics of each grape variety in the blend. The remaining 20% of the grapes are processed using the "Saignée" method. The resulting juice is then fermented in stainless steel tanks for 3 to 4 weeks at controlled temperture and an oxygen-free environement in order to preserve the varietal aromas.

Ageing

3 months on fine lees in stainless steel tanks.

Tasting notes

Beautiful salmon pink color with soft grayish hues. An intense and multi-layered aroma with notes of hibiscus, wild strawberries, wild raspberries and cranberries and hibts od flowers and fresh herbs. On the palate, it is fruity with hints of cherries and gooseberries. Light body, vibrant, balanced and fresh.

Food pairing

Pairs well with salads, fish delicacies, white meats and various cheeses. Its structure and complexity can be appreciated on their own, without the need for food pairings.
