In the summer of 2009, Ivaylo's family visited the Mussel Farm near Kavarna. They decide to try the seafood and, on the recommendation of the restaurant's sommelier, pairs it with a Traminer from the wine list. Everyone is pleasantly surprised how this variety goes perfectly with mussels. Therfore, Santa Sarah Wine Estate was inspired to create its own Traminer with distinctive qualities, restrained aromas and ethereal freshness and elegance. The grapes for Santa Sarah Traminer 2021 are entirely from own vineyards, in the area of Goritsa, village, near the Black Sea coast, in the foothills of Stara Planina, which are cared for by Julien Jivkov, and the wine is created and grown under the care of Kalina Dyankova.

Vinification
The grapes are picked early in the morning and placed in small boxes of 10-12 kg each. Following by destemming and a gentle direct pressing with the equivalent strength of a handshake between friends. In order to preserve their aroma, the must is fermented cool, but not cold, in an oxygen-free environment for 4 weeks, in small stainless steel tanks.
Ageing
3 months on fine lees in stainless steel tanks.
Tasting notes
Pale, straw yellow color with delicate golden-greenish highlights. Restrained and noble nose with notes of pine honey, white flowers, tropical fruits - lychee and pineapple, white pepper. Elegant body with a harmonious and fresh finish.
Food pairing
Pairs well with white meats, fish, vegetables, soft cheeses, seafood and pasta. Its structure and complexity can be appreciated on their own, without the need for food pairings.
