The story of Santa Sarah's vineyard and its Genowski Syrah Single Vineyard 2021 is a testament to the importance of terroir in winemaking. Santa Sarah Wine Estate planted its first vineyard of Syrah in 2016. The combination of soil, slope, drainage, altitude, and microclimate all contribute to the unique character and quality of the wine. The fact that this vineyard is located on a steep Southwest-South slope, hidden at the foot of Stara Planina, adds to its rarity and uniqueness. The dedication of Mladen Enev in taking care of the vineyard and the expertise of Kalina Dyankova in creating the Genowski Syrah Single Vineyard 2021 is evident in the resulting wine. The mission of this wine to express its "sense of place" and leave a lasting memory is a testament to the power of terroir and the role it plays in creating truly exceptional wines.

Gaia-Ivy's Vineyards

The creation of a Pinot Noir vineyard in the eastern part of Stara Planina by Santa Sarah Wine Estate was a deliberate decision, made after an extensive search for a suitable location with the right climate and soil. The specific slope, soil layers, drainage, altitude, and microclimate of the vineyard were all taken into consideration in the selection process. The planting material for this vineyard was carefully chosen from special masal selections of Pinot Noir from France, ensuring the highest possible quality of the grapevines. As soon as Iwailo set foot on this terrain, he knew that he would create a Pinot Noir that would capture the essence of the land and be true to its authentic, noble, and unpretentious character. In 2021, Santa Sarah Wine Estate realized this vision with the creation of their first Pinot Noir from this vineyard, coinciding with the birth of Iwailo's granddaughter, Gaia. The timing of these events seemed almost serendipitous, the wine was destined to bear this name and begin a new challenge for the Santa Sarah team. Kalina Dyankova, who cares for the vineyard, also crafted the wine itself. The careful selection of the Pinot Noir grapes, along with the winemaking process, ensured that the wine reflects the unique character of the vineyard and its terroir.

Santa Sarah Chardonnay

2023

The first Chardonnay made by Santa Sarah is vintage 2005. It is a special wine that embraced both traditional and modern winemaking techniques. At the time, Chardonnay wines were very popular worldwide, and the team at Santa Sarah wanted to create a wine that stood out from the crowd while still staying true to the grape's rich history. One of the ways they achieved this was by fermenting and ageing the wine in new French barrels, which is a traditional technique used to add depth and complexity to Chardonnay. At the same time, they wanted to retain the wine's freshness and intense fruit. Not far from the Black Sea coast, Santa Sarah Wine Estate takes on a new challenge, planting its own vineyards and growing grapes with sustainable practices that also speaks to Santa Sarah's commitment to producing high-quality wines that are also environmentally responsible. And the unique characteristics of the land from which the grapes were grown likely helped to give the wine its own individual expression, with bright and focused flavors, a kiss of oak, a concrete egg hug and pure, intense fruit.
