Santa Sarah's biggest success came a year after the beginning of the adventure "on wheels" of the "garage" winemakers with the 2002 vintage Santa Sarah BIN 40 Cabernet Sauvignon. The name "BIN" comes from the German expression "Ich bin" (I am) and shows the age of Iwailo in the year in which it was produced for the first time. Santa Sarah BIN 40 2002 gained the highest score and "Grand Diploma of Honor" during one of the first tastings of Bulgarian wines by a foreign specialists, among whom is Caroline Gilby MW. Chairwoman of the jury was the famous Jancis Robinson MW. The grapes for the Santa Sarah BIN 40 2021 come entirely from the estate's own vineyards in the Goritza area, which are tended to by Evgenia Georgieva, and the wine was created and grown under the care of Kalina Dyankova. The Santa Sarah BIN 40 wine is also used as the base for the Santa Sarah BIN 0.375 blend, where it makes up 50% of the blend.

Santa Sarah BIN 41 Merlot is a highly appreciate wine, known for its elegance, authenticity and complexity. The name "BIN" comes from the German expression "Ich bin" (I am) and shows the age of Iwailo in the year in which it was produced for the first time. The Santa Sarah BIN 41 2008 was awarded with Grand trophy for "Best Balkan wine" at the First Balkan International Wine Competition in 2012. This was a significant recognition of the potential of Merlot wines in Bulgaria and a testament to the skill and dedication of the Wine Estate. A few years later and a lot of experience gained, Santa Sarah continues to produce SS BIN 41 Merlot from its own vineyards near the Black Sea. The 2021 vintage of this wine is entirely made from their own grapes, which are cared for by Neven Barakov, and the wine is created and grown under the care of Kalina Dyankova. The Santa Sarah BIN 41 Merlot wine is also used as the base for the Santa Sarah BIN 0.375 blend, where it makes up 50% of the blend.

Privat is the estate's best wine from the respective vintage. Santa Sarah Privat 2006 won the award for "Bulgarian Wine of the Year" in 2008 from the first wine competition of "Bacchus" magazine. This prestigious award is a testament to the exceptional quality of the wine, and it further cements the reputation of the estate as a producer of high-quality wines. Santa Sarah Privat 2021 is mainly made from the Mavrud and Cabernet Sauvignon varieties, with most of the Mavrud grapes coming from 40-year-old vineyards owned by the estate in the Southern Bulgaria region. A small part of the Mavrud grapes in the blend, as well as the Cabernet Sauvignon, Malbec, and Petit Verdot varieties, are selected from special mini-territories of the estate's vineyards located near the Black Sea coast, which are of exclusive quality. A careful selection of specific barrels is made to create this inspiring and aristocratic wine. Mladen Enev is responsible for taking care of the grapes and vines, and the wine was created and grown under the care of Kalina Dyankova.

After the difficult and unfavorable year of 2009 and 2010, 2011 had ideal weather conditions, allowing the grapes to ripen optimally and develop high concentrations of flavor. The grapes used for this wine came from 30-year-old vines with reduced yields, ensuring that only the best fruit was selected for the wine. After a careful selection process, the best Cabernet Sauvignon barrels were blended together to create a small collection of 2 000 bottles. One Good Year Privat has the potential to age well in the bottle, developing a multi-layered authenticity and becoming even more complex over time.
