The story of Santa Sarah's vineyard and its Genowski Syrah Single Vineyard 2021 is a testament to the importance of terroir in winemaking. Santa Sarah Wine Estate planted its first vineyard of Syrah in 2016. The combination of soil, slope, drainage, altitude, and microclimate all contribute to the unique character and quality of the wine. The fact that this vineyard is located on a steep Southwest-South slope, hidden at the foot of Stara Planina, adds to its rarity and uniqueness. The dedication of Mladen Enev in taking care of the vineyard and the expertise of Kalina Dyankova in creating the Genowski Syrah Single Vineyard 2021 is evident in the resulting wine. The mission of this wine to express its "sense of place" and leave a lasting memory is a testament to the power of terroir and the role it plays in creating truly exceptional wines.

Vinification

The first step, cold maceration, is carried out at a temperature of 8°C in wooden vats made of French, German, and Austrian oak with a capacity of 3500 kg, as well as stainless steel vats with a capacity of 4200 kg. This process lasts for 7 days and helps to extract color and flavor compounds from the grapes. After the cold maceration, the grapes are fermented for 3 weeks in both wooden and stainless steel vessels. Following the fermentation, the grapes are subjected to a period of maceration at 31°C for 3-4 days. The final step in the winemaking process is malolactic fermentation, which takes place in 225 liters oak barrels for a period of 4 weeks.

Ageing

The wine is aged for a total of 12 months in French oak barrels - 20% are new and 80% have been previously used. Following the barrel ageing, the wine is then aged for an additional 4 months in stainless steel vessels.

Tasting notes

Ruby red colour. A rich, complex, delightful nose with plenty of flowers, black berries, earthy notes, exotic spices, butter and toast. On the palate, this wine is voluptuously medium body with a lavish structure and supple tannins. Round, harmonious finish.

Food pairing

Pairs well with different types of pasta and spaghetti, white cheeses, dark meat fillets with a delicate texture, cream sauces and potato garnishes. Its structure and complexity can be appreciated on their own, without the need for food pairings.
