Santa Sarah's biggest success came a year after the beginning of the adventure "on wheels" of the "garage" winemakers with the 2002 vintage Santa Sarah BIN 40 Cabernet Sauvignon. The name "BIN" comes from the German expression "Ich bin" (I am) and shows the age of Iwailo in the year in which it was produced for the first time. Santa Sarah BIN 40 2002 gained the highest score and "Grand Diploma of Honor" during one of the first tastings of Bulgarian wines by a foreign specialists, among whom is Caroline Gilby MW. Chairwoman of the jury was the famous Jancis Robinson MW. The grapes for the Santa Sarah BIN 40 2021 come entirely from the estate's own vineyards in the Goritza area, which are tended to by Evgenia Georgieva, and the wine was created and grown under the care of Kalina Dyankova. The Santa Sarah BIN 40 wine is also used as the base for the Santa Sarah BIN 0.375 blend, where it makes up 50% of the blend.

Vinification
Cold maceration at 8oC in wooden vats of French, German, and Austrian oak with a capacity of 3500 kg, stainless steel vats with a capacity of 4200 kg, and rotobarrels of Austrian oak with a capacity of 450 kg, for a period of 7 days. After the cold maceration, the grapes are fermented for 3 weeks. Following the fermentation, the grapes are subjected to a period of maceration at 31°C for 3-4 days. The final step in the winemaking process is malolactic fermentation, which takes place in 225 liters oak barrels for a period of 4 weeks.
Ageing
Тhe wine is aged for a total of 10 months in French oak barrels - 20% are new and 80% have been previously used.
Tasting notes
Dark purple color. Attractive nose with notes of ripe black fruit, dark chocolate, licorice, rosemary, mint and ink. On the palate this wine is voluminous, powerful, concentrated with satin smooth body and a spicy, noble finish.
Food pairing
Pairs well with red meats, traditional pork and game meat dishes, pasta and mature cheeses. Its structure and complexity can be appreciated on their own, without the need for food pairings.
