Rubin is an indiginous Bulgarian variety, a hybrid between Nebiolo and Syrah, selected and created by ILV Pleven and approved by the State Varietal Commission in 1961. The first Santa Sarah BIN 42 Rubin wine is from vintage 2003. The wine had a bold and intense character upon first taste, but also had a unique personality that set it apart from other wines. Santa Sarah BIN 42 Rubin is able to win over the hearts of wine lovers due to its potential for further development and distinctiveness. The name of the wine, "BIN," comes from the German expression "Ich bin" (I am), and it indicates the age of Ivailo, in the year when the wine was first produced. The vines used to make Santa Sarah BIN 42 Rubin 2019 are 35 years old and located in southern Bulgaria from winegrowers that are experienced and committed to producing high-quality grapes. The addition of Mavrud and Cabernet Sauvignon grapes from the estate's own vineyards in the Goritsa area adds complexity and depth to the wine. The vineyards are cared for by Mladen Enev, and the wine is created and grown under the care of Kalina Dyankova.

Vinification
Cold maceration at 8oC in wooden vats of French, German, and Austrian oak with a capacity of 3500 kg, stainless steel vats with a capacity of 4200 kg, and rotobarrels of Austrian oak with a capacity of 450 kg, for a period of 7 days. After the cold maceration, the grapes are fermented for 3 weeks. Following the fermentation, the grapes are subjected to a period of maceration at 31°C for 3-4 days. The final step in the winemaking process is malolactic fermentation, which takes place in 225 liters oak barrels for a period of 4 weeks.
Ageing
Тhe wine is aged for a total of 10 months in French oak barrels - 20% are new and 80% have been previously used.
Tasting notes
Deep purple color. An elegant nose with mineral character, with hints of black olives, earthy nuances and juicy black fruits. Lively, tight, focused and concentrated in the mouth with a very pleasant sweet-spicy finish.
Food pairing
Pairs well with a variety of meat dishes, pizza, fresh and mature cheeses. Its structure and complexity can be appreciated on their own, without the need for food pairings.
