Santa Sarah Wine Estate has a particular focus on Sauvignon Blanc as a grape variety, which is used as a platform for experimentation, experience, learning, and sharing. In 2004, the estate produced one of the first Sauvignon Blanc wines in Bulgaria, and since then, they have continued to develop their expertise in this area. To further this focus, six years later, the estate has planted 13 plots of their own vineyards with the Sauvignon Blanc variety on an area of 7.2 hectares, as well as 2 plots of the Semillon variety on an area of 0.30 hectares. The vineyards are located on the southern slopes of Stara Planina, near the Black Sea coast. This location provides a varied slope from 3 to 15o and an altitude of 30 to 130 meters, as well as a good mixture of soils and mainly Southeast and North-South orientation. These factors work together to create complex wines with distinctive individuality. The region's warm days and cool nights provide an extended growing season that allows the grapes to develop strong, intense varietal characteristics while maintaining a balanced, fresh natural acidity. The combination of the region's climate and the vineyard's location and soil contributes to the wine's unique character. Neven Barakov takes care of the grapes and vines and Kalina Dyankova is credited with creating and growing the wine.

Vinification

The grapes are picked early in the morning and placed in small boxes of 10-12 kg each. Following by cold maceration in the press for about 4-5 hours and a gentle pressing with the equivalent strength of a handshake between friends. 80% of the must undergoes cold maceration on the lees. In order to preserve their aroma, the musts are fermented cool, but not cold, in an oxygen-free environment for 4 weeks, in small stainless steel tanks and in egg-type concrete vats.

Ageing

5 months on fine lees in stainless steel tanks.

Tasting notes

Bright, light and vibrant color. Intense nose with notes of wet moss, herbs, boxwood and white peach. Juicy, smooth and fresh, with very good body and a focused, long aromatic finish.

Food pairing

Pairs well with fish, foie gras, spicy white meat dishes, poultry, Asian cuisine and mature soft cheeses. Its structure and complexity can be appreciated on their own, without the need for food pairings.
