The first vintage of Santa Sarah BIN 49 Cabernet Franc is 2011. The 2011 vintage was exceptional and impressively good for the viticulture. Santa Sarah BIN 49 is a special addition to Santa Sarah's collection of single-varietal BIN wines, with a focus on showcasing the unique qualities and identity of the Cabernet Franc grape. The name "BIN" comes from the German expression "Ich bin" (I am) and shows the age of Iwailo in the year in which it was produced for the first time. The grapes for the Santa Sarah BIN 49 2018 come entirely from the estate's own vineyards in the Goritza area, which are tended to by Todor Uzunov, and the wine was created and grown under the care of Kalina Dyankova. This suggests a high level of attention and expertise was involved in the wine's production, which is likely to have contributed to its impressive quality.

Vinification
Cold maceration at 8oC in wooden vats of French, German, and Austrian oak with a capacity of 3500 kg, stainless steel vats with a capacity of 4200 kg, and rotobarrels of Austrian oak with a capacity of 450 kg, for a period of 7 days. After the cold maceration, the grapes are fermented for 3 weeks. Following the fermentation, the grapes are subjected to a period of maceration at 31°C for 3-4 days. The final step in the winemaking process is malolactic fermentation, which takes place in 225 liters oak barrels for a period of 4 weeks.
Ageing
The wine is aged for a total of 6 months in used French oak barrels. Following the barrel ageing, the wine is then aged for an additional 4 months in stainless steel vessels.
Tasting notes
Vibrant and bright red color. The attractive and fruity nose with notes of ripe black fruits, noise, tobacco, and subtle hint of green pepper suggest a complex and layered aroma profile. Juicy, lively, and elegant body with velvety tannins points towards a wine with a medium to full body, and a pleasant mouthfeel. Fresh, spicy finish with good acidity and a balance between fruit and spice notes.
Food pairing
Pairs well with a variety of pasta, rizotto and mature cheeses. Its structure and complexity can be appreciated on their own, without the need for food pairings.
